DAY 16: A Day Out With My Children

Today is a lovely Saturday afternoon with my children.  Sam my eldest needs some new clothes, jeans etc.  He's such a lovely sole and never ever asks for anything.  But being a boy clothes just aren't that important so i have to keep an eye on the length of his trousers, tops etc.  The other day i noticed that he had rips in the top of his jeans and they were looking a bit like the Cat had died so it's about time Mum took him shopping to buy some more!  He is more than capable of me giving him money to get his own but we thought it would be nice to all go and have Dinner out tonight so that is what we're going to do BUT what will i have this time?  I don't want to undo all my good work as last weekend i felt terrible again so i will let you know later how i get on.

This morning for Breakfast I've baked some more cornbread but this time i made it with Almonds, Walnuts and Tomato.  It's delicious as usual.

Here how i made it.

One Cup of Self Raising Flour ( i used Gluten Free)
One Cup of Cornmeal
One Egg
One Cup of vanilla Rice Milk
Walnuts, Tomato and Almond Flakes

Put all your dry ingredients into a bowl and mix
In a separate bowl mix in the Almond Milk and Egg

Pour the wet mixture into the dry mixture and mix

Oil a flat tray with Olive Oil (don't forget the sides) and pour in the mixture and bake for 20 minutes or until golden brown.  EASY PEASY

There you have a delicious Corn Bread.

Other bread recipes can be found on The Yeast Diet website.  I got the original cornbread from the recipe book i bought on this site and have adapted it along the way.

The above recipe is a delicious breakfast bread.

Well I'm off to do some housework and then out into Manchester for the day.  We'll need to get wrapped up it's very very windy today and wet :( ROLL ON SUMMER!!!

UPDATE

I went into Manchester today with my children, my son used me to buy him new clothes then went off and  met his friends until he wanted to get home again! ha ha ha  Even the choice of going for Dinner at Dough (pizza) didn't sway him.  He's so lovely though i can't get upset with him and he is 16 for goodness sake and it's not very cool be seen around the Town with his Mum! My Daughter on the other hand was with me all day breaking my bank account and i did treat myself a little too so we all had a good time doing what we wanted.  Isobel and me did go to Dough for Dinner, Dough is a little restaurant in the Northern Quarter that makes Pizza on the premises and you can get made Gluten Free too!  Isobel obviously loves it as she says it's the only place she can sit, eat and feel normal and no one makes her feel like a freak (her words not mine).  I do understand what she means though as still even though Coeliacs is getting better in shops and restaurants it's still sometimes very hard.  Dough however are fantastic and made me a rather delicious salad. I asked for the Greek Salad without the Feta.  It came back to me piled high, it was delicious so i was really pleased.  Isobel had a Gluten Free New York Cheesecake so she can even have desert which is a rarity.

All in all we all had a fab day!
